New GOSTs for bread came into force In Russia

New interstate standards (GOSTs) for bakery products from rye and wheat flour began to operate in Russia on November 1.

It is assumed that some changes will occur due to the possible transition of small private bakeries to better flour, but no significant changes are expected in the market. Experts explain that the changes concern only definitions and terms and will not be able to affect the price and quality of products.

Now in the baking industry will appear the concept of "bread". The term "bread" will mean "shaped bakery products without filling." GOST added characteristics of the porosity of the product and excluded the characteristic of the smell of bread. The document also introduces the characteristics of the porosity of the product.

Innovations do not apply to baby and diet foods; they have their own standards.
